Test python installation with dedicated workflow #1871

This will eventually allow us to more easily test python beyond 3.10.

While testing locally I got (irrelevant) differences in the plots that showed up during the test, I'll try to modify a bit the plot comparisons so that they are more robust to these fluctuations.

Tested: python 3.11 working
python 3.12 is currently limited by eko because of numba
