Print diffs for new documentation directories

Description

This PR adapt the docs diff workflows to list new files even inside completely new directories. This is done by recursively finding every file inside the new directory and then making URLs for them.

Testing Instructions

See this doc diff comment on this PR as of 7c8dd41.

The test changes to the docs were subsequently reversed in 3fc3802.
