Delete base indices before recreation of sample data

Description

This PR adds a new command to the delete indices in the docker/es/justfile and use it in the script for loading sample data before triggering the ingestion process.

Testing Instructions

Found them in the linked issue. Try in main and then in this branch to confirm it fixes the problem.

Ah, thank you so much for fixing this, @krysal! I've been using ElasticVue for deleting the indexes...
