Ci updates

Update CI/CD to:

1. Install ruby and ceedling to run the unit tests.
2. Run unit tests on each operating system (linux, windows, macos)
3. Run unit tests in the deployment pipeline

Why:

1. To align the CI/CD test to the install method recommended in the readme, and enable testing on operating systems natively, not through docker.
2. To test all supported operating systems
3. Ensure tests pass before deploying a release
