Python 3.7 reached the end-of-life phase on 2023-06-27 and is no longer supported. The GitHub workflows now test for Python 3.9 instead of 3.7. Signed-off-by: Eva Millán <evamillan@bitergia.com>

This PR drops the support for Python 3.7 and updates the GitHub workflows to test for Python 3.9 instead.
