(docs) update codelab for Genkit 1.0 #1961

This PR fixes the following issues:

Use Gemini 2.0 Flash
In Genkit 1.0, the chat feature needs to be imported from the beta namespace
Ensures that the correct TypeScript types are installed for the PDF library
Fixes missing comment slashes for step 5
Cleans up the formatting, using plain Markdown
Made it easier to follow the implementation steps by including the comments in the code snippets
Made sure all commands will be executed in the correct folder

I verified the formatting by staging this file in DevSite.
