Honestyle, providing this amount of env variables that are just copied into a PHP ini file does not seems really useful and will require a lot of maintenance. It is pretty easy to override PHP settings by adding a volume that points to a custom ini file, or by creating a custom image that extends the GLPI one and provide its own ini file.
Adding a dedicated chapter to explain how to add a custom ini file and another one to explain how to use redis cache seems sufficient to me.

Hello,
Here is my implementation of Redis support (both on the GLPI side and the PHP side) the Docker way (which also works in a Kubernetes environnement).
This modification led me to implement something broader that falls within the scope of pull request #217 but is different.
I modified the README accordingly to illustrate these new elements. Oh and I also took the liberty to fix the markdown lint errors in the README while I was there.
