chore: update dependencies

This PR focuses on updating project dependencies to keep the gql ecosystem up to date and aligned with the latest package versions.

Changes included:

• Updated dependencies in pubspec.yaml
• Bumped package versions for gql, codegen and links
• Updated changelogs to reflect the changes

Notes:

• Some dependencies were not updated because they are part of the gql ecosystem itself.
• These packages need to be published to pub.dev first before they can be updated in pubspec.yaml.

Checklist

• Dependencies have been updated correctly.
• .fvmrc file correctly specifies the Flutter version.
• Existing tests run and pass successfully.
• CHANGELOG updated to reflect new version
• The gql version is updated in dependent packages after being published.
