Pion DTLS 2.1.1 fixed a bug, which is reproducible with the matrix lb server too: Either
openssl s_client -dtls1_2 -connect 127.0.0.1:8008 -debug -cipher aECDSA:aRSAoropenssl s_client -dtls1_2 -connect 127.0.0.1:8008 -debug -cipher aRSA:aECDSAworks, depending on the server certificate type. With this PR, DTLS clients no longer have to guess the server certificate type.
