Release v0.26.2

This is the first release of mink containing:

• Tekton's chains controller
• Sigstore's cosigned webhook

mink install will configure the Chains controller's secret automatically with the equivalent of cosign generate-key-pair.

All of the released images are also signed with Cosign using Github OIDC 🎉
