I like the idea of adding a callback to the plugin as well as two new options. Addresses my "issue" here: rbayliss#12
Fix Issue rbayliss#9 from: rbayliss#9 as well as add the new options and callback example to documentation.

Basically, these updates just add two new options to the options array and a callback function in the event you need to filter and then do something with the visible data (like adding the visible column data up or something).
This also includes a few small updates to the readme file. Feel free to check my spelling. You won't hurt my feelings.
