What king of data can I exchange?

You can exchange anything, 3D elements, parameters, properties, cameras, views, etc.

Does it works with programs without a 3D modeling interface?

Yes, you can share any type of data, so you could be even able to use it between excel files for example.

Can I turn on and off the connectors?

Yes, the idea behind BIMSOCKet is that you can share the amount of information that you want and filter it, if you need to do so.
