Improve maintainability and misc fixes

Motivation

The purpose of this pull request was solely to enhance maintainability of the project along with creating more consistencies in the codebase. The delta is really large here and some of the things accomplished in this are

• Removed unused styles and consolidated them into a shared styles file where application.
• Reorganize imports and only import what is necessary (aka remove *).
• Updated project dependencies to the latest stable (Expo 51 upgrade will be a future enhancement).
• Updated example app to use 12 hour when locale is 'en'.
• Attempted to standardize code so things like useState, styles, etc are all in the same place for consistency.
• Fixed issue with Example App on Android not properly displaying theme (dark and MD2).
• Address fixes from revert: performance fix for multiple ios until better solution found #403
• Fixes No Icons in 'DatePickerInput' modal when using 'Material Design 2' #400 (I got the solution from an open paper issue)
• Bump the docusaurus dependencies to the latest stable.

@RichardLindhout If you wouldn't mind testing this that would be great! I did run it all on all platforms and it appeared to work, but there are a lot of changes, so I'd appreciate a second set of eyes. I'll also be pointed my app to this branch to indirectly test as well just to double check nothing is broken.
