make a copy of the project you want multiple instances of.
run unity and open one of the projects.
open second instance of unity
on mac
open the terminal and type open -na unity. from here you can select a copy of the project to run. selecting the project you are already running will give you an error prompt.
on windows
open unity as you would normally and select copy of project
