Reformat README tables and add community examples section in README.md and record changes in CHANGELOG.md while bumping package version to 0.0.10 in package.json

Reorganizes README headings by adding a Skills section and moving Installation under it, aligns table formatting, removes xmtp-gaia from the main Examples table, adds a Community examples table, updates CHANGELOG Unreleased entries, and bumps package version to 0.0.10.
